Guinness brownies for St Paddy’s

Not the usual St Paddy’s

Tired of green beer and boerewors or peppermint liqueur flavoured everything? Still want to do something special for St Patrick’s, well here you have it…

Guinness brownies. (Thank us later)

They taste even better than they look and they’re super easy to make even if you’re a fella.

Ingredients

Brownie

¼ cup vegetable oil

¾ cup Guinness

2 cups sugar

½ tsp vanilla essence

¼ cup melted butter

2 eggs

1 cup Cake flour

⅔ Cup cocoa

½ cup nuts + extra for decoration (I used hazelnuts)

½ cup chocolate chips

Ganache

¾ cup chocolate chips

2 tbsp butter

2 tbsp Guinness

¼ cup icing sugar

Steps:

  1. Preheat oven to 180 degrees and grease a baking pan ( I used 15×15 cm)
  2. Melt butter in microwave and let it cool
  3. Mix together oil, Guinness, sugar and vanilla essence until combined
  4. Add melted butter and mix well
  5. Add eggs and mix well
  6. In a separate bowl combine flour and cocoa
  7. Add dry ingredients to the wet mixture and combine
  8. Add nuts and choc chips
  9. Pour into your greased pan and bake for about 35 – 40 minutes
  10. For Ganache combine all ingredients except icing sugar and melt in the microwave
  11. Add icing sugar to mixture and pour over cooled brownies
  12. Cut and enjoy!!

Big surprise they’re not green but in true Irish tradition we recommend garnishing them with a four leaf clover, that’s if you can find one.
